Have y’all ever eaten something so good at a restaurant that you just have to try and “recreate” it at home, if you will? We traveled to California a couple times and had this delicious salad from a place called The Lime Truck or TLT. I fell in love with their chicken ssalad! The last time we went though they changed their menu and owners. Stinks big time when that happens, doesn’t it?
Well now moving across country, I got a desire for that yummy salad, that no longer exists, so I had to put something together to try and come close to that. However, mine turned out so tasty and it has my creative twists in it. I’m not sure they even compare because when I started creating it, I just went with my own knowledge and ideas to make this come together.

Green Chili Chicken
Cold Salad
Serves 4
Ingredients:
Bag of shredded lettuce
3-4 chicken breasts
1 can mild green chili enchilada sauce
Container of yummy guacamole
1 can black beans
1 bag of frozen corn
1 tomato
1/8 chili powder
1/4 tsp cumin
1/4 tsp smoked paprika
1/4 tsp cilantro
1 lime squeezed mixed
1/8 c coijta cheese
Salt and pepper
Crisp tortilla shells
Green Chili Chicken:
3 chicken breasts cooked and shredded
1 can mild green chili enchilada sauce
Scoop of quacamole
Mix all together and warm slightly. Around 30 seconds will do!
Corn and Black Bean “salad”:
1 can blacks beans
1frozen bag of mixed corn (do not use canned)
1 tomato diced
1/8 chili powder
1/4 tsp cumin
1/4 tsp smoked paprika
1/4 tsp cilantro
1 lime squeezed mixed
1/8 c coijta cheese
1/2 lime
Salt and pepper to taste
Cook black beans and corn separately and set to the side and dice your tomato. Next add spices and coijta cheese, stir to combine. Squeeze in the juice of one lime and mix it again. Salt and pepper to taste.
Put in the fridge for about 15 minutes until it cools down and you’re ready to assemble the salad.
Assembling the salad:
Create a bed of shredded lettuce. Squeeze a little fresh lime on top of it. Add a layer of shredded chicken, a layer of corn and black bean salad, and a scoop of quacamole! Top with coijta cheese and a crisp tortilla shell.
Your taste buds are probably acting up right about now! For good reason too, this combination is so tasty!
