Happy October! Can you believe how far we’ve come this year? This pandemic sure has been a lot, hasnt it though? I’m so happy it’s the holiday months and that we get to bring some added and much needed joy to our lives.
With it being the first of October I just had to make something festive for dinner. But can I be honest really quick and say that I’ve had some health challenges that have thrown me for a loop the last bit? So when coming up with dinner it had to be simple easy and well satisfying to our taste buds. Pancakes and eggs seemed like a good idea. Then I thought! Ah ha! How about pumpkin chocolate chip pancakes because the cookies sound good. Ha but we can’t eat cookies for dinner, so pancakes it is.
Festive food is one of my favorite things to make for my family. I don’t know what it is. Maybe it’s that it is a celebratory eating experience and it’s making an extra special memory together around the food. Something like that. So each chance I get, I take it.
I love that this recipe is simple and quick. I think all of us have enough on our minds and plates these days. So this is a simple way to make those memories and eat the yummy food without a lot of brain power to do so. Plus pumpkin and chocolate chips? You can’t go wrong! Unless you don’t like that combo then maybe you can. But let’s just go with, I love it! However, if you don’t, just leave those cute mini chips out. 😉
Pumpkin chocolate chip pancakes

Ingredients:
1 3/4 cup Trader joe’s buttermilk pancake mix (or any you have on hand or like)
1 c. water
1/4 c. canned pumpkin
1/2 tsp. cinnamon
1/8 c. mini chocolate chips
Note* Substitute 1/4 c. canned pumpkin per egg.
Directions:
Start by measuing the dry ingredients into a large bowl. Next add in 1/4 cup canned pumpkin and 1 cup water. Stir it all together until combined. Mix in chocolate chips if desired. Make pancakes on skillet or in pan. Serve with maple syrup.
It’s such an easy and yummy way to enjoy the flavors of the season without having to do much at all outside your normal dinner routine. I sure love breakfast for dinner! Cheers!
